He has management experience in private restaurants, chain restaurants, fine-dining restaurants, casual restaurants, hotel restaurants, and healthcare restaurants. At each place he has managed, he completely revamped the staff, menus, pricing, inventory, recipes, and perception of the operation. His focus is always to ensure hospitality in customer service and to generate high revenue.

Michael has been in the food and beverage industry for over 15 years. He strives to create synergy not just with food, but with all facets of gastronomy. His approach is to be adventurous and view food as art. He accomplishes this by producing simple, yet distinguishable dishes that incorporate multiple colors, flavors, and textures to appeal to all senses. Through attention to detail and dedication, Michael created consistent and repeatable practices at each operation that he was a part of. He believes operational success comes from understanding inventory, menu development, calculating food costs, establishing excellent vendor relations, creating organization and charts for BOH operations, and establishing timeliness and effective communication.
